Shrimp, Green Apple and Jicama Salad

Recipe makes 6 Servings

3/4 Lb large shrimp, peeled and deveined
1/4 Tsp salt
1/4 Tsp black pepper
1/2 Tsp cumin
1/3 cup(s) olive oil
2 Tbsp agave nectar
2 cup(s) romaine lettuce, shredded
2 granny smith apple, peeled and shredded
2 Jicama, peeled and shredded
1 lime, juiced
1 jalapeño pepper, seeded, chopped
1 avocado, diced
4 Tbsp Cotija cheese, crumbled

Season the shrimp with salt, pepper, and cumin.
Place a large skillet over Medium-High heat and spray lightly with nonstick cooking spray. Cook shrimp several minutes until firm and opaque.
For the salad dressing, combine the oil, honey and lime juice. Mix well.
Combine all the other ingredients in a large bowl. Add in the dressing and shrimp. Toss to combine.
Serve immediately.
