Recipe makes 6 Servings

1/3 cup(s) tahini
1 bunch of fresh mint, leaves only, divided use
1 1/2 Tbsp Vela Farms Ginger Habanero Jelly
1 medium shallot, chopped
1/4 cup(s) lemons, juiced
1/4 cup(s) water
32 Oz H-E-B Organic Carrots, shaved with a peeler

In a blender, combine tahini, 1/4 cup mint leaves, ginger habanero jelly, shallot, lemon juice and water. Blend until smooth then season with salt and cracked pepper to taste.
In a serving bowl, place shaved carrots and remaining mint leaves.
Toss the salad with tahini dressing as desired. Season with salt and pepper as needed.
