Sesame Pork Lettuce Cups

Recipe makes 6 Servings

3 Tbsp toasted sesame oil, divided use, 2 tbsp for sauce and 1 tbsp for cooking
1/3 cup(s) fresh orange juice
2 Tbsp soy sauce, plus more as needed
2 Tbsp rice vinegar
1 Tbsp lemon juice
1 Tbsp Sambal Oelek Chili Paste
1 Lb thin sliced pork milanesa, diced
1 Tbsp fresh garlic, minced
2 Eva Butter Lettuce Hearts, as needed for scoops
1/2 cup(s) green onion, diced
8 Oz organic button mushrooms, chopped

In a bowl add 2 tablespoons of sesame oil, orange juice, soy sauce, rice vinegar, lemon juice and chili paste. Whisk to combine and set aside for topping on lettuce cups.
In a non stick sauté pan add remaining sesame oil and let it get hot.
Add garlic, onions and mushrooms, stir-fry for 2 minutes before adding pork.
Stir fry everything for 4 to 5 minutes or until pork is just cooked through. Remove to a bowl.
To serve, scoop pork mixture into lettuce cups and drizzle with sauce.
Garnish with bean sprouts, carrots, more green onions, or crushed peanuts or your favorite garnishes as desired.
