Recipe makes 6 Servings

1 cup(s) all purpose flour
1 cup(s) cake or pastry flour
1 Tbsp baking powder
1 Tsp kosher salt
4 Oz cold unsalted butter, cut into pea size bits
1 large egg
1/2 cup(s) buttermilk
1 cup(s) cheddar cheese, grated
3 serrano peppers, roasted, seeded and minced
1/2 cup(s) heavy whipping cream

Preheat oven to 425ºF.
Place all flour, baking powder, and salt in an stand mixer fitted with paddle attachment. With mixer on low, add butter and mix until well incorporated.
Combine egg and buttermilk into flour with the mixer still on low. Add cheese and roasted peppers to mixture. Mix only until mixture is roughly combined. Place dough on cutting board and knead the dough by hand or with a rolling pin. Roll out until dough is about a ¼ inch thick.
With a circular cookie cutter cut out biscuits in the shape and size you like and place them on a sheet pan lined with parchment paper. Brush tops with cream and place in oven.
Bake 20 - 25 minutes until golden brown and puffed up. Serve with butter and honey.
