Seared Snapper With Sauteed Bok Choy & Pineapple

Recipe makes 4 Servings

4 snapper, 4 Oz fillets
3 Tbsp canola oil, divided
1/8 Tsp salt, as needed to taste
1/8 Tsp pepper, as needed to taste
1 Tbsp garlic, chopped
1/2 white onion, sliced
1 baby bok choy, quartered
1 pineapple, peeled and cut into 1/2-inch cubes
1 lime, juiced
1 Tbsp black cumin seeds
1 Tbsp unsalted butter

Preheat a medium sautè over medium-high. Brush fish with 1 tablespoon oil and season with salt and pepper.
Place snapper in hot pan and sear about 5 minutes then flip and sear other side. Remove from pan and set aside.
In same pan, add remaining oil, garlic, onion and bok choy and sautè 5 minutes. Add pineapple, lime juice and black cumin seeds and cook 3 additional minutes.
Stir in butter until melted and serve on top of fish.
