Seared Salmon Salad with Kombucha Vinaigrette

1/2 cup(s) Central Market Organic Raspberry Lemon Ginger Kombucha
1 Tbsp honey
1 medium shallot, chopped
2 Tbsp fresh lime juice
1/3 cup(s) fresh raspberries, plus more for garnish if desired
1 Tbsp Dijon mustard
12 Oz Central Market Organics Spring Mix, plus more as needed
1 cup(s) roasted salted pepitas
1 cup(s) Agriform Piave Cheese, shaved
14 Oz fresh salmon, Seared until fully cooked, then cooled, crumbled and set aside

In a blender combine the following, kombucha, honey, shallot, lime juice, raspberries, and mustard, adding olive oil while running.
Season to taste and refrigerate until ready to use.
In a large bowl add spring mix, pumpkin seeds, cheese, and salmon.
Toss everything together with dressing as needed, and season to taste. Optional garnish of fresh raspberries.
