Seared Ribeyes with Browned Butter Gremolata

16 Oz thick cut ribeye steaks
1 Tbsp avocado oil
1 medium lemon
2 Tbsp fresh flat leaf parsley, very finely chopped
1 1/2 Tsp fresh garlic, grated or finely chopped
1 Tsp sea salt, coarsely ground
1 Tsp fresh black pepper, coarsely ground
1/4 cup(s) salted butter

Instructions

Preheat grill to medium-high. Rub both sides of steak with avocado oil and allow to sit at room temperature 30 minutes.

To make gremolata use a fine grater or microplane grate zest from 1 lemon into a small bowl. Add parsley, garlic, salt and pepper. Stir together.

Place steaks on grill and cook on each side 5 to 6 minutes per side (or to 145ºF for medium rare). Remove to a plate and cover loosely with foil.

Melt butter in a small saucepan over medium heat until it foams up or turns light brown. Remove butter from heat and add gremolata mixture. Drizzle over steaks and serve immediately.
