Seared Chicken With Black Beans, Cilantro & Roasted Peppers

Recipe makes 4 Servings

1 Tbsp garlic cloves, chopped
2 Tbsp canola oil
1/2 Tsp salt
1/2 Tsp pepper
4 boneless, skinless chicken breasts
15 Oz black beans, rinsed and drained
6 Oz H-E-B Fire Roasted Red Peppers, rough chopped
1 bunch cilantro, chopped
1/2 cup(s) H-E-B Low Fat Sour Cream

Preheat a large sauté pan to medium-high.
In a bowl, combine garlic, oil, salt and pepper then add chicken and turn to coat.
Place chicken in pan and sauté 6 to 7 minutes per side.
Add black beans and chopped peppers and cook 3 minutes.
Stir in chopped cilantro and sour cream, and serve.
