Seared Cauliflower in Truffle Butter

Recipe makes 4 Servings

1 medium head of fresh cauliflower, chopped into small florets
3 Oz Wyatt's Black Truffle Finishing Butter
2 Tbsp Ottavio Grapeseed Oil
1/4 Tsp kosher salt
1/4 Tsp pepper

Cut cauliflower florets in half so that you have one flat side, to sear.
In large sauté pan over med/high heat add the grapeseed oil and allow the oil to get hot.
Place cauliflower florets cut or flat side down in the oil and cook for about 2-3 minutes per side, until cauliflower is nicely seared or browned.
Once browned on the one side flip them over and turn off the heat, but keep the pan on the stove. Add truffle butter stirring to coat the seared cauliflower pieces with the melted butter. Season to taste with salt and pepper and serve immediately.
Cauliflower should still be firm, but have a caramelized flavor.
