Ingredients

Recipe makes 4 Servings

2 Tsp ground cumin
2 Tsp ground ancho chili powder
1/2 Tsp Saigon cinnamon
1/2 Tsp coarse ground black pepper
1/4 Tsp Mexican oregano
1 Tsp sea salt, coarse
2 Tsp extra virgin olive oil
1 Lb boneless skinless chicken breasts
2 Tbsp canola oil, for searing

Instructions

Heat oven to 350°F.

Spray large baking dish with non-stick cooking spray and set aside.

Combine cumin, chili powder, cinnamon, pepper, oregano, salt and oil in a small bowl and stir well to combine into a rub.

Rub each breast on all sides with the seasoning rub.

Heat a skillet over medium-high heat for 3 minutes and add 2 tablespoons cooking oil.

Sear breasts on each side for 1/2 minute and place in prepared baking dish.

Bake chicken breasts for 25 minutes or until juices run clear when pierced with a fork.
