Combine all ingredients except the wonton wrappers, water and cornstarch into a food processor and pulse until smooth. Scrape down sides to make sure everything is well incorporated.
In a small bowl, combine water and cornstarch together and mix well. Lay wonton wrappers onto a sheet pan and fill each wonton with 1 to 2 teaspoons of chicken mixture.
Seal potstickers by wetting the tip of your finger with cornstarch water and lightly wet all sides of the wonton. Seal the sides together and press and pinch to make sure mixture doesn't leak out. Repeat until all are done in the same manner. (Yields approximately 2 dozen.)
To cook, stir fry in oil until potstickers are crispy on all sides and internal temperature of filling reads 165°F. These are also great brushed with oil and baked at 400°F for 10-12 minutes. Serve with any favorite dipping sauce.
