Scallops with Citrus Panko Gremolata

Recipe makes 4 Servings

1/2 cup(s) H-E-B Roasted Garlic Panko Bread Crumbs
1 orange, zest only
1 lemon, zest only
1 lime, zest only
2 medium garlic, finely chopped
2 Tbsp Italian parsley, finely chopped
1/4 Lb H-E-B Salted Butter, softened
1 Lb sea scallops
1/2 Tsp kosher salt
1/2 Tsp black pepper
1 Tbsp olive oil

In a medium bowl, combine bread crumbs, orange, lemon, and lime zests, garlic, parsley, and butter. Mash with a fork or spoon until well combined. Set aside.
Preheat oven to 450ºF. Pat scallops dry then season with salt and pepper. Heat a large oven safe skillet on medium-high. Add oil and carefully place scallops flat side down in pan. Cook 1 to 1 1/2 minutes, flip scallops and remove skillet from heat.
Place a heaping teaspoon of bread crumb butter mixture on top of each scallop and bake 3 minutes. Spoon melted butter over scallops and serve immediately. Great over pasta or rice.
