Savory Turkey Veggie Meatballs on Spring Mix

Recipe makes 4 Servings

2 Tbsp H-E-B Olive Oil
1 medium carrots, peeled & shredded
1 small zucchini, shredded
3/4 cup(s) white onions, fine chopped
4 mushrooms, fine chopped
1 Tsp kosher salt
2 Tsp black pepper
1 Lb H-E-B Natural Lean Ground Turkey
1/4 cup(s) Hill Country Fare Whole Wheat Bread Crumbs
1 H-E-B Large Egg, beaten
1 Tbsp H-E-B Worcestershire Sauce
2 cup(s) Central Market Organic Spring Mix

Heat oven to 400°F.
Line baking pan with foil, spray with non-stick spray, and set aside.
Heat large heavy bottom skillet over medium heat for 3 minutes.
Add olive oil, carrots, zucchini, onion and mushrooms to hot skillet and stir-fry for 5 minutes. Season with salt and pepper.
Place vegetables in mixing bowl and allow to cool 5 minutes.
Add ground turkey, whole wheat bread crumbs, beaten egg and Worcestershire sauce to cooked veggies. Mix with your hands and form into 12 meatballs.
Place meatballs on prepared sheet pan and bake on center oven rack for 15 minutes or until internal temperature reads 165°F.
Place 1/2 cup spring mix on 4 plates, arrange 3 meatballs on each, and serve.
