Ingredients

Recipe makes 12 Servings

10 Oz frozen chopped spinach, thawed and drained
4 Oz roasted red & yellow peppers, chopped
3 Oz reduced fat feta cheese, crumbled
1 cup(s) tomatoes, chopped
4 large eggs, beaten
2 Tbsp olive oil
1 1/2 cup(s) H-E-B All Purpose Baking Mix
1 cup(s) low fat buttermilk

Instructions

Preheat oven to 350ºF. Lightly grease a muffin tin with non-stick spray.

Combine all ingredients in a large bowl and mix just until combined. If batter is too dry ,add an additional 1/2 cup of buttermilk or water.

Spoon batter into muffin cups. Bake 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.
