2 cup(s) carrots, peeled and cut into 2-inch diagonal chunks
1 rutabaga, peeled and cut into 2-inch diagonal chunks
1 turnip, peeled and cut into 2-inch diagonal chunks
1 sweet potato, peeled and cut into 2-inch diagonal chunks
2 parsnips, peeled and cut into 1-inch chunks
8 red potatoes, cut into halves
8 mushrooms
8 H-E-B Garlic Peeled, thin sliced
1 red onion, cut into 8 wedges
1/3 cup(s) H-E-B Extra Virgin Olive Oil
1 Tbsp Central Market Organics Herbes de Provence
1/8 Tsp kosher salt

Heat oven to 450°F.
Line a deep roasting pan with heavy-duty foil and spray with nonstick cooking spray.
Combine all ingredients in the prepared roasting pan and toss well to coat.
