1 Tsp H-E-B Olive Oil
2 Tbsp shallots, chopped
1/2 cup(s) red bell pepper, chopped
1 cup(s) mushrooms, chopped
1 cup(s) quinoa
3/4 cup(s) H-E-B Garlic Chicken Broth
3/4 cup(s) water

Instructions

Heat heavy bottom skillet over high heat for 2 minutes.

Add olive oil, shallots, bell pepper and mushrooms; stir-fry 2 minutes.

Add quinoa and stir-fry 1 more minute.

Add garlic chicken broth and 3/4 cup water to mixture.

Bring to boil then reduce heat and cover. Cook for 15 minutes.

Place in serving dish with your entrée of choice, enjoy!
