Sautéed Spinach and Mushroom with Caramelized Onions

Recipe makes 4 Servings

1 Tbsp olive oil
2 garlic cloves, sliced
3 cup(s) white onion, julienned
2 cup(s) mushrooms, sliced
3 cup(s) baby spinach
1/4 Tsp black pepper
1/4 cup(s) heavy cream
1/4 cup(s) Parmesan cheese
2 cup(s) cooked brown rice

Heat olive oil in a large nonstick skillet on medium until hot.
Add garlic and onions, and cook 15 to 20 minutes until browned, stirring occasionally. Remove from pan and set aside.
Return pan to heat, add mushrooms and cook several minutes.
Add spinach, black pepper, and caramelized onions to pan. Stir in heavy cream and Parmesan cheese, and cook several minutes until slightly reduced.
Spoon over cooked brown rice and serve.
