Recipe makes 5 Servings

1 Lb H-E-B Regular Pork Breakfast Sausage
5 large eggs, beaten
10 Frieda's Ooh La La French Style Crepes, warmed
12 Oz H-E-B Queso Blanco, heated according to package directions
1/2 cup(s) green onions, chopped
1/2 cup(s) tomatoes, chopped

Cook sausage in a large non-stick skillet over medium-high heat until no longer pink, breaking up as it cooks.
Add in the beaten eggs, reduce heat and continue to cook until desired doneness. Remove from heat.
Fill each crepe with 1/3 cup or so of sausage egg filling and roll. Place two crepes per plate and cover with warmed queso. Garnish with green onions and tomatoes.
