12 Oz H-E-B Mild Breakfast Sausage
2 large Hass avocados, pits removed and flesh scooped out
1/4 cup(s) green onions, diced or minced small
2 Tbsp fresh lime juice
1/2 cup(s) queso fresco, crumbled small

Instructions

Place a non stick pan over medium heat. Add sausage, crumble and cook until just starting to brown and crispy. Approximately 8 to 10 minutes. Set aside to cool.

Meanwhile, place avocados in a bowl along with green onions and lime juice. Whisk to combine until just chunky and season to taste.

To serve, toast bread and spread a layer of avocado on each followed by crumbled sausage and garnish with queso fresco.

Chef's Note: My favorite way to serve these is to garnish with chopped roasted red peppers, diced jalapeños and salsa on top.
