Sausage and Gravy English Muffin Sandwich

Recipe makes 4 Servings

8 Oz H-E-B Fresh Sage Sausage, form into 1/2-inch thick patties the width of an English muffin
2 Tsp unsalted butter
2 Tbsp all purpose flour
1/4 cup(s) heavy cream
1 1/4 cup(s) whole milk
1 Tsp black pepper
4 English muffins, sliced in half

Place a medium sauté pan over medium-high heat and brown sausage patties about 2 to 3 minutes on each side or until well browned and cooked through. Transfer to a plate and keep warm.
To same pan, add butter and once melted, add flour and whisk until slightly browned.
Add cream and milk, and whisk until gravy thickens, about 5 minutes. Adjust temperature as needed and season with salt and pepper.
While gravy thickens, toast English muffin halves in oven or toaster.
Spoon gravy into nooks and crannies of bottom slice of English muffins then top with sausage patty and additional gravy as desired.
Chef's Note: Add red pepper flakes or additional herbs like parsley or sage to gravy for a more flavorful breakfast sandwich.
