4 H-E-B Select Ingredients Seasoned Boneless Skinless Chicken Breast
1 fl oz extra virgin olive oil
8 slices Central Market Black Pepper Uncured Bacon, chopped
1/2 cup(s) white onion, peeled and thin sliced
8 slices H-E-B Thin Sliced Mild Cheddar Cheese
8 slices H-E-B Bakery Whole Grain Chia Seed Bread
1 heirloom tomato, cored and sliced thin
1 fresh Hass avocado, peeled, pitted and sliced
1/2 cup(s) H-E-B In-Store Guacamole

Preheat grill to 375°F. Grill chicken breasts 5 minutes per side, or until they reach an internal temperature of 165°F. Set aside.
Add olive oil to a sauté pan placed over medium heat. Add bacon and onions and cook 5 minutes or until bacon is crispy and onions are translucent. Remove pan from heat.
Place a slice of cheese on each slice of bread and grill bread-side down for 1 minute or until bread is grill-marked and cheese is melted. Remove to a cutting board.
Grill tomato slices for twenty seconds then remove from heat.
To assemble sandwiches, lay out 4 grilled bread and cheese slices and top each with 2 heaping tablespoons of sautéed bacon mixture, chicken, tomato, avocado and a spoonful of fresh guacamole. Finish with remaining grilled bread slices.
