Ingredients

Recipe makes 12 Servings

1 Lb salt cod, flaked
2 cup(s) all purpose flour
3 Tsp baking powder
3 large eggs
1 1/2 cup(s) whole milk
2 Oz unsalted butter, melted
1/4 cup(s) chives, chopped
1/4 cup(s) parsley, chopped
1 Tsp lemon zest
2 cup(s) canola oil, as needed for frying

Instructions

Soak cod in cold water for 24 hours, changing water every 8 to 12 hours.

Remove cod from water then crumble into a bowl. Discard any bones you see.

Add remaining ingredients (except oil) and mix just until combined. You do not want to over mix.

Heat 2 to 3 cups vegetable oil in a deep pot on medium-high.

Working in batches, use a scoop or a large spoon to carefully drop fritter batter into hot oil. Do not overcrowd pot. Cook 3 to 4 minutes per side or until golden brown. Remove to a paper towel lined plate or tray.

Serve hot!
