Salsa-Baked Catfish

Recipe makes 4 Servings

1 nonstick cooking spray
1 Lb catfish fillets
1/4 Tsp H-E-B Coarse Sea Salt
1/4 Tsp ground black pepper
1/2 cup(s) Jardin Fire Roasted Red Salsa
1/2 cup(s) shredded cheddar cheese
1 1/4 Oz Fritos, crushed (about 1/2 cup)
4 Tbsp H-E-B Sour Cream
1 avocado, cut into wedges

Heat oven to 450°F. Spray a 9 x 13-inch baking dish with nonstick cooking spray
Cut fish into 4 portions and place fillets in baking dish. Season both sides with salt and pepper. Spread salsa evenly over tops of fish.
Bake about 8 minutes, or until fish just begins to flake with a fork and turns from translucent to opaque (white).
Remove fillets from oven and sprinkle with cheese. Return to oven 2 minutes, or until cheese melts.
Sprinkle fish with crushed Fritos. Serve with sour cream and avocado wedges, if desired.
