Salmon with Bacon & Apricot Chutney

Ingredients

Recipe makes 4 Servings

1 Lb salmon fillets, cut into 4 oz portions
1/4 cup(s) Ottavio Grapeseed Oil, as needed
1 cup(s) slices thick cut bacon, diced
3 fresh apricots, pits removed, cut into thin strips
1 cup(s) Two Bros Outta Towner Carolina Vinegar BBQ Sauce

Instructions

Season salmon liberally with salt and pepper, place a large non-stick skillet over medium-high heat.

Add oil allow to get hot, approximately 1 minute. Place salmon flesh side down skin side up and cook 5 to 7 minutes or until salmon is very crispy.

Flip and cook an additional 3 to 6 minutes or until salmon is cooked to desired doneness. Remove from pan set aside to rest.

Using same pan, add bacon cook until just crisp. Add apricots and BBQ sauce and allow to cook until apricots are just soft, approximately 3 to 5 minutes.

Season sauce to taste as needed and serve over or along side salmon.
