2 cup(s) H-E-B Chipotle & Garlic Fire Roasted Salsa
1 Hill Country Fare Olive Oil Cooking Spray
16 H-E-B White Corn Tortillas
1/2 cup(s) white onions, finely chopped
8 Oz cotija cheese, grated

Heat oven to 350°F.
Line a large baking pan with foil, spray with nonstick cooking spray and set aside.
Blend salsa in a food processor to a smooth consistency, place in a pie pan and set aside.
Wrap tortillas in paper towel, and heat in microwave for 1 minute and 15 seconds.
Dip each tortilla in the chipotle salsa, spread 2 tablespoons of queso and 1-2 teaspoons chopped onion down center of tortilla, and roll tightly; place enchiladas in prepared baking pan in a single layer, seam side down; top with chipotle salsa, remaining cheese and onions, then bake for 15 minutes.
