Recipe makes 2 Servings

1/2 cup(s) walnuts
2 cup(s) fresh basil, packed leaves
1/3 cup(s) Boar's Head Pecorino Romano Grated Cheese
1/4 cup(s) Parmesan cheese, grated
2 garlic cloves
1/2 cup(s) extra virgin olive oil
1 Tsp fresh lemon juice
1/4 cup(s) fresh Italian parsley leaves, packed
1 package of H-E-B Easy Pasta Penne Rigate, prepared according to package instructions

Preheat oven to 350ºF.
Place walnuts on a dry sheet pan and roast in oven 8 to 10 minutes or until fragrant and slightly browned.
Place toasted walnuts and all ingredients in food processor or in molcajete and blend until smooth. Season to taste with salt and pepper, if needed.
If thinner pesto is desired, add 1 tablespoon of oil until consistency is reached.
Serve 1/4 cup of sauce per serving of pasta.
