Recipe makes 8 Servings

2 Lb sweet potatoes, peeled and cut into 1/4 inch round slices
1 Lb granny smith apple, peeled, cored & sliced
1 cup(s) yellow onion, chopped
2 Tbsp ginger, fine chopped
2 Tbsp H-E-B Olive Oil
1/4 cup(s) Hill Country Fare 0 Calorie Sweetener
1/4 Tsp Hill Country Fare Ground Cinnamon
1/4 Tsp Fiesta Cayenne Pepper
1/8 Tsp H-E-B Iodized Salt

Heat oven to 400°F.
Line a roasting pan with foil and spray with nonstick cooking spray.
Combine all of the ingredients in a large bowl and season with salt.
Spread the mixture in the prepared roasting pan and roast for 1 hour, stirring every 15 minutes. Serve immediately.
