2 Lb Texas Gulf Shrimp in shell, thawed in refrigerator
1 1/2 Tsp cumin
1 Tsp coriander
1 Tsp kosher salt, plus more as needed
1 Tsp cracked pepper, plus more as needed
1 Tsp fresh garlic cloves, minced
1/4 cup(s) extra virgin olive oil
1/4 cup(s) fresh cilantro, chopped

Instructions

Preheat oven to 400˚F.

In a bowl combine shrimp, cumin, coriander, salt, pepper, garlic, olive oil and cilantro.

Place shrimp on a sheet pan and roast for 15 to 20 minutes or until fully cooked.

Allow shrimp to cool, then refrigerate until ready to use.

Season to taste as needed.
