Recipe makes 4 Servings

2 Lb sweet potatoes, peeled and cut to a medium dice
2 Tbsp fresh rosemary, roughly chopped, plus more or less as needed to taste
1 Tsp kosher salt, plus more as needed to taste
1 Tsp cracked black pepper, plus more as needed
1/4 cup(s) extra virgin olive oil
1/4 cup(s) H-E-B Honey Butter Veggie Sauce, plus more as needed
1/2 cup(s) Pecorino Romano Cheese, shredded or grated as needed to garnish

Preheat oven to 400ºF.
In a bowl, toss together potatoes, rosemary, salt, pepper and olive oil.
Place on a sheet pan lined with parchment paper, roast for 30 to 40 minutes, or until nicely browned.
Transfer potatoes to a bowl, while hot toss with honey butter sauce. Garnish with cheese, and season to taste as needed.
