Roasted Potatoes With Crisp Ham And Rosemary

2 Lb red potatoes, size C
20 prosciutto slices, halved lengthways
1 rosemary bunch, cut into 2 inch sprigs
1/3 Tsp H-E-B Olive Oil Cooking Spray
1/2 Tsp H-E-B Iodized Salt
1/2 Tsp H-E-B Black Pepper

Instructions

Place potatoes in a large sauce pan. Cover with cold water and bring to a boil over high heat.

Reduce heat to medium. Boil gently, partially covered for 10 minutes, then drain potatoes.

Preheat oven to 325°F.

Wrap 1 slice prosciutto around each potato and secure with a rosemary sprig.

Place potatoes in a single layer large roasting pan. Spray with oil and season with salt and pepper.

Roast for 30-45 minutes or until potatoes are golden and crisp.
