Roasted Okra with Radish Tzatziki

Recipe makes 5 Servings

1 Lb fresh okra
2 Tbsp extra virgin olive oil
1 Tsp kosher salt
1/2 Tsp cracked black pepper
1 1/2 cup(s) H-E-B Plain Greek Yogurt
1 Tsp fresh garlic cloves, minced
2 Tbsp fresh chives, chopped finely
1 1/2 Tbsp fresh lime juice
1/4 cup(s) fresh cilantro, chopped
1/2 cup(s) fresh radishes, chopped

Preheat oven to 400ºF.
Combine okra, olive oil, salt and pepper in a bowl. Toss well to combine. Spread out on a sheet pan and roast 30 to 40 minutes or until nicely browned.
Meanwhile, make the tzatziki sauce: place yogurt, minced garlic, chives, lime juice, cilantro and radishes in a bowl. Toss well to combine. Season to taste with salt and pepper as needed. Tzatziki will keep up to a week in the fridge.
Serve sauce with roasted okra.
