Roasted Lemon and Za'atar Chicken

Recipe makes 8 Servings

2 1/4 Lb H-E-B Natural Young Whole Chicken, rinsed and patted dry
1 1/2 Tbsp Adams Reserve Za'atar Seasoning, plus more as needed
1 medium lemon, thinly sliced and seeds removed from slices
1 Tbsp Central Market 100% Spanish Organic Extra Virgin Olive Oil, plus more as needed for drizzling

Place chicken in a roasting pan and truss if desired.
Season liberally with za'atar seasoning and place lemon slices evenly over entire surface of chicken.
Cover with plastic wrap and refrigerate for at least 2 hours or overnight is best.
Preheat oven to 400˚F.
When ready to roast, remove plastic and roast until internal temperature of chicken reads 170˚F. Approximately 1 1/2 hours.
Once roasted, allow to rest then drizzle with olive oil, carve and serve.
Season to taste as needed with salt and pepper.
