8 Oz English green peas
3 Tbsp Wyatt's by H-E-B™ Maitre d'Hotel Finishing Butter
1 cup(s) plain Greek yogurt
2 garlic
1 lemon, juiced
2 Tbsp Ottavio Private Reserve Extra Virgin Olive Oil
1/4 Tsp salt
1/4 Tsp black pepper

Preheat oven to 400°F.

In a microwave safe bowl melt the butter and set aside. Toss the fresh peas in a bowl with the melted butter and a generous pinch of salt. Toss the peas generously to coat in butter and salt.

Place peas on a sheet pan lined with parchment paper and roast for 20-30min or until the peas look just slightly browned and wilted. Remove from the oven and allow to cool slightly before the next step.

In a food processor combine the yogurt, garlic, olive oil, lemon juice and peas. Pulse until smooth and green, season to taste with salt and pepper and allow to sit in the fridge to meld the flavors.
