Recipe makes 4 Servings

8 H-E-B Fresh Bakery Flour Tortillas, plus more as needed
2 green chiles, cut into thin strips
1/2 Tsp cumin, as needed for seasoning
1/2 Tsp kosher salt, as needed
1/2 Tsp black pepper, as needed
1 cup(s) H‑E‑B Select Ingredients Colby Jack Thick Cut Shreds

Instructions

Preheat a non-stick pan or griddle.

Take tortilla and cover evenly with cheese, top with peppers and season with a little cumin and salt and pepper.

Cover bottom tortilla with a layer of cheese, followed by peppers, then a pinch of cumin, salt and pepper.

Press another tortilla on top and press to form quesadilla.

Place on griddle or in pan and cook 3 to 5 minutes per side or until tortilla is slightly browned and cheese is melted.

Allow to cool then cut and serve, repeat process with additional quesadillas.
