Recipe makes 4 Servings

1 Tsp kosher salt, plus more as needed
1 Tsp ground cumin
1 Tsp coriander
1 Tsp turmeric
1 Tsp Madras curry powder
1 large head of cauliflower, stem discarded and cauliflower cut into smaller florets
1/4 cup(s) golden raisins, as needed for garnish
1/3 cup(s) roasted cashews, crushed as needed for garnish

Preheat oven to 425ºF. Place a sheet pan in oven to preheat as oven heats.
In a small bowl, combine salt, cumin, coriander, turmeric, and curry powder. Mix well to combine.
Place cauliflower in a large bowl, add spice mixture and olive oil, and toss until well coated.
Spread out cauliflower on hot sheet pan then return to oven for 20 to 25 minutes or until nicely roasted.
Place in a serving bowl and garnish with golden raisins and cashews. Season to taste as needed.
Chef's Note: Putting the cauliflower on the hot sheet pan helps sear the bottom side of the veggies.
