Roasted Cauliflower with Fennel Frond

Recipe makes 6 Servings

1 large head of cauliflower, cut into bite sized florets
1/4 cup(s) extra virgin olive oil
1 Tsp garlic powder
1 Tsp coriander
1 Tsp cumin
1 Tsp lemon zest
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
1 bulb of fennel, green fronds or leaves removed for garnish

Preheat broiler to high, position oven rack 6 to 8 inches below broiler.
In a large bowl, toss together cauliflower, olive oil, garlic powder, coriander, cumin, lemon zest, salt and pepper, mix well.
Place cauliflower onto a sheet pan and spread out evenly. Place under broiler and cook for 10 to 15 minutes, or until cauliflower is nicely browned.
Move cauliflower around in pan every 2 to 3 minutes to ensure even browning.
Remove to a serving bowl and toss with fennel fronds. Season to taste as needed.
Chef's Note: If you prefer not to use your broiler, simply preheat your oven to 500ºF, and roast cauliflower until nicely browned. Double recipe if needed to accommodate more guests.
