Roasted Broccoli with Feta Heirloom Tomato Dressing

Recipe makes 6 Servings

1/4 cup(s) white wine vinegar
3 cloves of garlic, smashed
1 medium shallot, peeled and roughly chopped
4 Oz crumbled feta cheese
1 cup(s) fresh basil leaves, tightly packed
1 small heirloom tomato, sliced
1/2 cup(s) extra virgin olive oil, plus 2 tbsp for tossing broccoli
16 Oz broccoli florets, or whole broccoli if preferred
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed

Preheat broiler to high. Adjust oven rack to be positioned 8 to 10 inches below the broiler.
In a food processor add vinegar, garlic, shallot, feta, basil, and heirloom tomato. Pulse until just smooth.
Add olive oil and pulse again just to combine. Dressing should look a little rustic and loose. Season to taste as needed and refrigerate until ready to use.
In a bowl toss broccoli with olive oil and salt and pepper. Place on a sheet pan and broil until just starting to brown, 6 to 10 minutes depending on height of oven rack.
To serve, place the broccoli on a plate and drizzle with feta dressing.
Chef's Note: If you prefer a smoother more emulsified dressing use a blender and just add a tablespoon of water at a time until dressing is desired consistency.
