Roasted Beets with Yogurt and Garlic Crumbs

Recipe makes 4 Servings

6 beets red or gold., Approximatley 2 bunches, tops trimmed off.
1 cup(s) greek yogurt
1 medium blood orange or navel orange, zest and juice
2 Tbsp honey
1/2 cup(s) H-E-B Premium Croutons, seasoned, crushed to large crumbs
1 Tbsp fresh mint, roughly chopped, plus more as needed to garnish

Bring a large pot of water to a boil season with a large pinch of salt.
Add beets and turn heat down to simmer, cover and allow to cook unitl beets are tender when poked with a knife.
Place beets into an ice bath to cool them, wipe off beet skins with a paper towel and discard. Cut beets into quarters and set aside.
In a bowl, combine yogurt, orange zest and juice, honey, season to taste with cracked black pepper and salt. Whisk to combine.
To serve, add a few beets to serving dish drizzle with yogurt and garnish with crushed croutons and chopped mint if desired.
