Rice with Toasted Almonds & Cranberries

Recipe makes 6 Servings

2 Tbsp unsalted butter
1/4 cup(s) almond slivers
1/4 cup(s) dried cranberries
1 cup(s) rice
1 scallion, thin sliced
2 cup(s) Central Market Organics Low Sodium Chicken Broth
2 Tbsp orange zest, grated

Heat 2 quart pot over medium low heat. Add butter, almonds, and cranberries. Stir-fry for 1 minute until almonds turn golden. Remove almonds and cranberries from pan and place in dish.
Add rice and scallion to heated pot and stir-fry with remaining butter over medium low heat (about 2 minutes).
Add 2 cups of chicken broth and bring mixture to boil over high heat.
Reduce heat to low, cover and cook for 20 minutes.
Place rice in a serving dish and top with toasted almonds, cranberries, and orange zest.
