Ribeye Steaks with Madeira Mushroom Sauce

1 1/8 Tsp H-E-B Iodized Salt, divided
1 1/8 Tsp H-E-B Black Pepper, divided
2 Lb H-E-B Boneless Prime Beef Ribeye Steaks, cut 1 inch thick
1 Tbsp H-E-B Unsalted Butter
2 small shallots, finely chopped
8 Oz shiitake mushrooms, sliced
1/2 cup(s) H-E-B Reduced Sodium Beef Broth
2 Tbsp sherry wine

Instructions

Sprinkle 1 teaspoon of salt and pepper evenly over both sides of steaks; press to adhere and set aside.

Heat butter in a medium skillet or saucepan over medium-high heat. Sauté shallots 1 minute, then add mushrooms and sauté 3 minutes longer.

Add broth and wine; bring to a boil and reduce heat to low. Simmer 6-8 minutes; remove from heat and cover to keep warm.

Heat a large, nonstick skillet over medium heat and spray with nonstick cooking spray.

Cook steaks 5-10 minutes per side or until they reach an internal temperature of 140°F for medium-rare or 150°F for medium doneness.

Cut steaks into 6 portions and top with mushroom sauce.
