Quince Marinated Chicken with Hatch Tortillas

Recipe makes 4 Servings

1 Lb boneless, skinless chicken thighs
1 cup(s) Hatch peppers, roasted and roughly chopped
1/4 cup(s) quince paste
1 Tbsp garlic, minced
2 Tbsp canola oil
1/4 cup(s) rice wine vinegar
1/2 Tsp kosher salt
1/2 Tsp black pepper, ground
4 Hatch tortillas

Place chicken in a bowl or resealable bag. Set aside.
Combine Hatch peppers, quince paste, garlic, oil, vinegar, salt and pepper in a blender and pulse for 45 seconds.
Pour marinade over chicken and turn to coat completely. Marinate 1 to 8 hours in the refrigerator.
When ready to cook, preheat grill to medium-high.
Remove chicken from marinade, shake off excess, and grill 5 minutes per side.
Once fully cooked and juices run clear, set aside to rest then slice.
Serve in tortillas with your favorite toppings.
