3 Tbsp extra virgin olive oil
1/4 cup(s) garlic, roughly chopped
1 cup(s) whole cherry tomatoes
28 fl oz San Marzano Tomatoes
1/2 Tsp crushed red pepper flakes, optional
1 Tsp dried oregano, double if using fresh
1/2 cup(s) basil leaves, packed
1 Tsp kosher salt
1 Lb Central Market Millerighe IGP Pasta di Gragnano, cooked according to package directions
1 cup(s) Pecorino Romano cheese

Instructions

Heat olive oil in a large heavy bottom sauce pan over medium heat.

Add in chopped garlic and cook for 2 to 3 minutes, stirring constantly.

Add in whole cherry tomatoes and cook for an additional 4 minutes until tomatoes begin to wrinkle then add canned tomatoes.

Add in chili flakes and herbs. Simmer for 15 to 20 minutes, then season with salt and more herbs if desired. Cook an additional 15 minutes on low simmer.

Toss sauce with freshly cooked pasta, top with cheese and serve.
