Recipe makes 6 Servings

1 1/2 cup(s) tortilla chips, (measure crushed - about 4.5 oz)
2 Tbsp unsalted butter
5 large eggs
16 Oz Cowgirl Hatch Chili Queso, (or flavor of your choice)
1/3 cup(s) green onions, finely sliced
2 .3000 Oz H-E-B Fully Cooked Bacon Pieces

Instructions

Place tortilla chips in a re-sealable plastic bag and crush with a rolling pin to small crumbs.

Melt butter for 30 seconds in microwave and mix well through tortilla crumbs.

Line a muffin tin with 12 cupcake liners. Press about 1/4 cup of crumbs into the bottom of each liner. Reserve about 1/4 cup for topping.

In a medium sized bowl whisk together eggs. Add queso and green onions and stir through well.

Pour equal amounts into lined muffin tin and top with bacon and remaining tortilla crumbs. Bake for 12 to 15 minutes, or until lightly browned and puffed on top.

Remove from oven and allow to cool slightly in muffin tin. Enjoy immediately or chill and re-heat for 10 to 15 seconds in microwave for a quick breakfast.
