Recipe makes 4 Servings

20 Oz Rotel Original Diced Tomatoes with Green Chilies, drained
1/2 cup(s) fresh cilantro, chopped
16 Oz Rosarita Traditional Refried Beans
4 Mission burrito-size flour tortillas
1 cup(s) H-E-B Shredded Mexican Blend Cheese
1 Pam original no stick cooking spray

Combine tomatoes and cilantro in a small bowl for salsa and set aside.
Spread 1/4 of the beans on half of each tortilla and sprinkle 1/4 cup cheese blend over beans.
Fold each tortilla over beans and cheese to form half-moon shape.
Lightly spray quesadillas with cooking spray.
Heat a large skillet or griddle over medium-high heat for 3 minutes and grill one or two quesadillas on each side for 2 minutes or until lightly browned and cheese is melted.
Repeat with remaining quesadillas. Cut each quesadilla into 3 wedges and serve with prepared salsa.
