Pumpkin Spiced Oats with Cranberries and Ricotta

Recipe makes 6 Servings

1 1/2 cup(s) steel cut oats
15 Oz can of pumpkin puree
1 Tsp pumpkin spice
3 cup(s) unsweetend almond milk
3 Tbsp maple syrup, divide use
1 Tsp orange zest
1 cup(s) ricotta cheese
1/4 cup(s) dried cranberries

In a medium sized sauce pan, combine oats, pumpkin, pumpkin spice, almond milk, and 2 tablespoons maple syrup.
Bring mixture to a boil stirring constantly, then reduce heat to a low simmer and cook for 30 minutes stirring occasionally.
Combine remaining tablespoon of maple syrup, and orange zest with the ricotta.
Serve a warm bowl of oats with a heaping dollop of spiced ricotta and some cranberries.
