Recipe makes 12 Servings

1 H-E-B Select Ingredients Pumpkin Spice Baking Mix
1 1/4 cup(s) water
1/2 cup(s) vegetable oil
2 eggs
1/3 cup(s) sugar

In a large bowl, combine baking mix, water, oil, eggs, and sugar until mixed.
Pour batter into a lightly greased muffin pan, filling pan cups almost to the top.
If you would like to add a crumb topping, in a small bowl combine 1/3 cup brown sugar and 2 tablespoons flour. Mix in 1 tablespoon of butter. Sprinkle topping over muffin batter.
Bake at 350°F for 18 to 26 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
