Pumpkin Chipotle Cream Soup

Ingredients

Recipe makes 6 Servings

2 Tbsp extra virgin olive oil
1 cup(s) white onions, diced
3 garlic cloves, minced
1 Tsp ground cumin
1 can chipotle peppers in adobo sauce
1 jar Così Com'è Pumpkin Cream
3 cup(s) chicken stock
1 1/2 cup(s) heavy whipping cream

Instructions

In a large pot heat olive oil, until oil begins to shimmer slightly in pan. Add in onions, garlic and stir-fry until they start to turn a light tan color.

Add in cumin, peppers and stir-fry additional 2 - 3 minutes.

Add in pumpkin cream and chicken stock and bring to a simmer. Once soup is brought to a simmer, add in cream and purée soup with an emersion blender. (Or pour soup in blender, careful not to start too high and splash hot soup all over).

Return soup to heat and bring to a simmer and allow to reduce and slightly thicken. Season to taste with salt and pepper if needed. Remove from heat and serve. Soup is great garnished with a little cilantro and lime juice.
