Pumpkin and Goat Cheese Frittata

Recipe makes 6 Servings

2 Tbsp extra virgin olive oil
3 cup(s) fresh pumpkin, peeled and diced into approximately 1/4 inch cubes
1 medium yellow onion, diced small
3 cloves of garlic, minced
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
1/4 Tsp fresh nutmeg, grated, plus more as desired
6 large eggs
1/2 cup(s) half and half
4 Oz Montchevre Goat Cheese, crumbled
1/2 cup(s) Parmesan cheese, grated
1/4 cup(s) Gourmet Garden Lightly Dried Chives, as needed to garnish

Preheat oven to 350°F.
In a large non-stick oven safe sauté pan set over medium high heat, add oil and pumpkin. Sauté for 8 to 10 minutes stirring constantly.
Add onions, garlic, salt, pepper and nutmeg. Continue to cook for at least 10 to 12 more minutes or until pumpkin starts to soften and is slightly caramelized.
Whisk eggs and half and half together until creamy. Add eggs to pan, stir with a spatula and turn off heat. Spread eggs evenly throughout pan to coat everything.
Sprinkle on goat cheese, Parmesan and chives. Bake for 15 to 20 minutes or until eggs are set in middle and slightly browned.
Remove and allow to cool before cutting and serving. Season to taste as needed.
