Prosciutto and Red Wine Bolognese

3 Tbsp extra virgin olive oil
1 cup(s) carrots, diced small
1 cup(s) celery, diced small
1/2 cup(s) shallots, chopped
4 garlic cloves, minced
1 jar of Cosi Com'e Dried Tomatoes, drained
2 Tbsp tomato paste
1 Lb ground pork
1 Lb ground sirloin
1 Tsp kosher salt
1 Petit Sirah (red wine)
1/2 cup(s) prosciutto, diced into chunks
1 bag (17.6 oz) Central Market Vesuvio Pasta
1 cup(s) Parmesan cheese, for topping and garnish
1 cup(s) basil, chopped for topping

In a large pot add olive oil and allow oil to get hot before adding carrots, celery, shallots and garlic. Stir-fry for 8-10 minutes until veggies are slightly colored and soft. Add drained tomatoes, tomato paste and stir-fry for another 2-3 minutes.
Add in the pork and beef, toss in a large pinch of salt and cook mixture for 10-15 minutes before adding in the whole bottle of wine and chopped prosciutto. Turn heat down to medium/low and cook covered for 1 hour.
While sauce is cooking cook pasta according to package instructions, drain and set aside. Once the bolognese is ready, spoon out the pasta into bowls, add sauce and garnish with cheese and chopped basil. Season to taste with salt and pepper as needed.
