Recipe makes 20 Servings

8 Oz salted butter
2 cup(s) whole milk
1 Tsp kosher salt
2 Tbsp granulated sugar
2 cup(s) H-E-B Organics Bread Flour
2 cup(s) H-E-B Large Organic Brown Eggs, plus one extra egg yolk

Preheat oven to 400˚F.
In a medium sized pot, add butter, milk, salt and sugar, Bring to a boil, being careful to monitor pot so milk doesn't boil over. Adjust heat as necessary.
Turn heat down to low and add flour to milk mixture, whisk vigorously for 2 to 3 minutes until it forms a wet dough and begins to leave a film in pot. Remove from heat and allow to cool slightly.
Add slightly cooled dough to a stand mixer fitted with paddle attachment.
Turn mixer on to low speed and gradually add in eggs and yolks 1 or 2 at a time allowing eggs to incorporate into dough before each addition.
Once eggs are incorporated, turn mixer to higher speed for 1 minute to allow dough to get fluffy. Remove dough to a piping bag or a gallon zip top bag.
Pipe golf ball sized rolls onto a sheet pan fitted with parchment paper, pipe balls approximately 1 to 2 inches apart.
Bake until golden brown and puffed up, approximately 25 to 35 minutes. Remove from oven and allow to cool completely.
For use, profiteroles are typically cut in half, and stuffed with your favorite ice cream.
Traditional toppings include whipped cream, chocolate sauce and shaved chocolate. Garnish however you choose.
